Anne Fletcher

Chef Leslie shared with us a wonderful summer dish.

SHRIMP AND AVOCADO SALAD
WITH MANGO DRESSING

Serves 6

Shrimp:
1 Lemon, halved
6 cups water
1 small Onion, sliced
2 Tbls. Kosher Salt
1 Jalapeno, halved
1 Tbls. grated fresh Ginger
1, 12-ounce bottle of Lager
2# Shrimp, peeled/deveined

Squeeze lemon into large saucepan and add lemon halves. Add water, onion, salt, pepper, ginger and beer and bring to boil. Cover and simmer for 15 minutes. Add shrimp and cook 3 minutes. Drain and spread on a platter. Put in fridge. Halve shrimp, if desired.

Dressing:
1 ripe Mango, peeled and finely diced, 1 ½ cups
¼ cup Rice Vinegar
2 Tbls. fresh Lime juice
1 tsp. Maille grain mustard
½ cup Canola Oil
1 Tbls. chopped Cilantro
½ tsp. grated Lime Zest
¼ tsp. minced Jalapeno
¼ c. thinly sliced Red Onion
Salt and Pepper to taste
2 Hass Avocados, sliced
Lime wedges for serving

Process 1/3 cup of the diced mango with vinegar, lime juice, mustard and puree until smooth. With the machine on, add the oil in a thin stream to emulsify. Add cilantro, lime zest and pepper. Pulse to combine.

Transfer dressing to large bowl. Add shrimp, red onion and the remaining mango and season. Toss to coat. Arrange the avocado slices around a large platter. Mound shrimp salad in the center and garnish with lime wedges. Serve immediately.
