Chef Leslie Recipe

GRILLED TENDERLOIN
ON ROSEMARY SKEWERS
Serves 8 lap-band sized servings

2# Potatoes, peeled and quartered
Salt
2 Tbls. Black Peppercorns
16 Fresh Rosemary branches, about 8” long
8 4-ounce Beef filets, about 1 ¼” thick, cut into three pieces
Olive Oil
2 Tbls. Chives, finely chopped

8 large Shallots, peeled and finely chopped
4 large Tomatoes, seeded and finely diced

Simmer potatoes in salted water 15-20 minutes, or until tender. Drain and smash with a fork, breaking the potatoes up into small pieces. Set aside.

Place peppercorns in a clean dishtowel. Using the bottom of a skillet, crush the peppercorns and set aside. Strip leaves from rosemary branches and reserve for another use. Skewer meat pieces on 4 double- branch skewers, season with salt.

Heat the olive oil to medium heat. Add the potatoes and cook, stirring until golden, about 5 minutes. Add chives and season with salt. Transfer to a platter. Wipe out the skillet or, if necessary, scrub without using soap until clean. Dry the skillet.

Heat one tablespoon oil in the skillet over medium-high heat. Add brochettes and cook until brown, 1-2 minutes on each side for medium rare. Place on potatoes, covering loosely with foil.

Reduce heat to medium and add remaining oil, crushed peppercorns and shallots. Cook, stirring for one minute, and then add scallions and cook for 30 additional seconds. (You may deglaze the pan with a little shot of red wine or brandy if needed). Remove pan from heat and stir in tomatoes. Heat through. Season sauce with salt and spoon around the meat/potato platter.
